Danish Apple Cake.

Apple Cake or as they say in Denmark, Æblekage, is a Danish specialty and very delicious.

You can enjoy the cake as a dessert or just have it with a cup of coffee.

If you have your own apple tree in the backyard you are all set and ready to go.


Danish Apple Cake with Cream.

     Recipe:

     Serves 6-8

     1200 g Apples

     120 ml Water

     100 g Bread crumbs

     75 g Sugar

     60 g Butter

     300 ml Whipping Cream

     Vanilla and Sugar to taste.



Method:


Peel, core and slice the apples.

Cook the apples with the water in a pot to a thick paste and add sugar and vanilla to taste. Leave to cool down.

Mix bread crumbs and sugar.

Melt the butter in a frying pan and add the bread crumbs and sugar mixture.
Cook until golden brown and crisp.
When cooling down stir it now and again to prevent it from forming lumps.

The dessert is put together just before serving.
Layer the cooked apples and bread crumbs in a bowl, ending up with bread crumbs on the top.
Whip the cream and decorate with cream on top and decorate with jelly or grated chocolate.



Baked Danish Apple Cake.

    Serves 6-8

    1 kg Apples
    ¾ Cup Brown Sugar
    1 ½ Cup Bread Crumbs
    60-70 g Butter
    200 ml Whipping Cream

Method:


Cut the pealed Apple into small pieces.
Mix Bread Crumbs and Brown sugar.

Grease an oven dish or tin and layer the apples and the bread crumbs mixture so you end up with a layer of bread crumbs at the top and press it into the tin or oven dish.

Melt the butter and pour it over.

Bake in preheated oven at 180°C for 45 min.

After baking let it cool down a bit before you turn it out of the tin or oven dish.

You can serve it lukewarm or cold decorated with whipped cream and jelly.
